Rice & Beans

As part of my revitalizing of my diet and exercise this spring, I have begun cooking rice and beans. I did some research and discovered that red beans and rice is actually a spicy cajun dish. I have done my own version, which is more of an Indian style curry of rice and beans. I personalize it by using a Japanese style medium grain CalRose rice, which I also use for making rice balls. I have also recently made the dish with lentils instead of beans. Vegetables used in the curry are onion, celery, garlic, ginger, and pablano/banana peppers.

I have also increased my steps, using a Fitbit to track, and am walking 10-15 thousand steps a day again. Results so far are the loss of the 3-5 pounds I gained during my winter lull, and I am on track to complete the weight loss plans I began last summer. A quick summary is that I was obese and about 80 pounds overweight. I began limiting my caloric intake to less than 2000 calories a day and would walk 10-15 miles a day as well as hit the gym twice a week.

The result was that I lost 50 pounds and several shirt, pant, and shoe sizes in the last half of 2015. I plan to lose the remaining 30 pounds or so and maintain whatever weight my body naturally settles into. This has been one of the hardest things I’ve ever done, disciplining myself for meals and exercise. The payoff has been great because I look and feel better. Also, I have wanted to replace my wardrobe for nearly a decade and have finally been able to do so.
